BALLENISLES COUNTRY CLUB WELCOMES FABIAN LUDWIG AS NEW DIRECTOR OF CULINARY AND EXECUTIVE CHEF
BallenIsles Country Club in Palm Beach Gardens, Fla. is pleased to welcome Fabian Ludwig as the club’s new director of culinary and executive chef. Ludwig will oversee all facets of food service and preparation, across all six of BallenIsles Country Club’s dining venues.
A seasoned culinary professional with more than 25 years of experience, Ludwig most recently led the opening of the eight restaurant venues at the new Gaylord Rockies Resort & Convention Center in Aurora, Colorado. Prior to his time in the Denver area, Ludwig was the executive chef at the iconic New York Marriott Marquis in Times Square. Before the Marriott Marquis, he led all F&B operations for the former Revel Resort in Atlantic City, New Jersey.
“Chef Ludwig comes to us with a wealth of knowledge and extensive background leading sizeable operations with multiple venues like ours,” said BallenIsles Country Club General Manager and COO Ryan Walls. “We have a strong team in place, which is now further enhanced with the appointment of Chef Ludwig. Ludwig’s culinary career has taken him to Hungary, Switzerland, England, Bermuda and Germany where he started as an apprentice in Hamburg. While training under certified master chefs, he developed a style rooted in classical technique, while preserving his personal interest of using high-quality seasonal ingredients that reflect market preferences. Ludwig has a degree in Culinary Arts from Gastromiche Fachhochschule, located in Hamburg.

In 1963 legendary Florida developer John D. MacArthur and the PGA of America teamed up with golf course architects Dick Wilson and Joe Lee to design a championship-caliber golf facility. Over the next ten years, BallenIsles, then called PGA National Golf Club, hosted numerous major tournaments like the PGA Championship and PGA Seniors Championship and was home for the Professional Golfers’ Association of America. Since the early 2000’s, BallenIsles Country Club has been consistently ranked as one of the Top 100 Clubs in America.
A $35 million clubhouse renovation was completed in November 2018, featuring 115,000 square feet of luxurious space; three championship courses with 54 holes of golf; a world-class 21-court tennis complex including an exhibition tennis court and four Pickleball courts; and a state-of-the-art Sports Complex with a full service spa and salon, fitness center, Pilates studio and resort-style swimming pool.
