Maggie Valley, North Carolina – Maggie Valley Club & Resort in Maggie Valley, North Carolina recently welcomed a new culinary team, naming Ashley Westbrook Director of Food & Beverage and Jon Cropf as Executive Chef. Westbrook and Cropf will lead the culinary operations at the property’s Pin High Bar & Grille and share a passion for F&B operations as well as a creativeness for new menu items and specials.
Westbrook brings eight-plus years of food and beverage sales experience to Maggie Valley. Prior to arriving at Maggie Valley, she served as the private events director and the banquet manager at The Clubs of Peachtree City in Peachtree City, Georgia. At Maggie Valley, Westbrook will oversee daily restaurant operations, club events and handle all private event inquiries. Her mission is to provide members and their guests with a friendly and memorable dining experience.
Cropf has more than 22 years of experience in culinary arts and holds a culinary degree from Johnson & Wales University in Charlotte. After college, he became the chef de cuisine at a small, upscale restaurant in downtown Charlotte. With a taste of fine dining under his belt, he sought to broaden his experience and moved to Lake Tahoe. Over the next three years, he worked at Tahoe Mountain Club as sous chef of several restaurants throughout the Lake Tahoe Basin. During his time with Tahoe Mountain Club, under mentorship of Executive Chef David Lutz, he learned the importance of seasonality, local sourcing of ingredients and quality of service. These three beliefs have become pillars of Cropf’s cooking philosophy and are evident in the way he runs the kitchen. Prior to his arrival at Maggie Valley, Cropf served as executive chef at Trummer’s on Main in Clifton, Virginia. In his four years there, the restaurant achieved top five placements on Northern Virginia Magazine’s Top 50 restaurants list for four consecutive years. Outside of his love for cooking, Cropf has a passion for fly fishing, foraging and gardening.
