Monterey, Calif. – The Club at Pasadera in Monterey, Calif. and Executive Chef Colin Moody recently hosted The Disciples of Escoffier, the premier gastronomic society established to maintain and promote the traditions of French cuisine, for a dinner celebrating the 175th anniversary of the birth of the great master of French gastronomy, Auguste Escoffier. Chef, author and Founder of Disciples d’Escoffier International of Monterey, Mary Chamberlin, organized and orchestrated the evening for about 125 Disciples and guests. Michel Escoffier, the great grandson of Auguste Escoffier, traveled from France to celebrate the anniversary dinner at The Club at Pasadera.
“Chef Colin’s rendition of the Escoffier menu was beautiful,” said Chamberlin. “I have never received so many phone calls from guests after the dinner who told me it was one of the best dinners they have ever had. Everything came out perfectly.”
The celebratory dinner was held in The Club at Pasadera’s clubhouse with Chef Moody chosen to prepare a menu which included Lobster “Newberg,” Venison Tenderloin with Cumberland Sauce, and Fromage D’ Ambert Cheesecake for the worldwide celebration. Similar dinners were held on October 28, 2021 (the anniversary date) around the world at which about 7,000 participated. The Club at Pasadera and Chef Moody were chosen to host the event because the descendant of Escoffier and president, Michelle Escoffier is a huge fan of Chef Moody’s work. He is a fellow Disciple of Escoffier and has done signature events for the Disciples of Escoffier in the past.
“It was an honor to chef and host this prestigious event, I could not be prouder of the Pasadera team,” said Chef Moody.
Moody has been the Executive Chef at The Club at Pasadera since January 2019. His culinary approach honors the region’s reputation as a mecca for fresh and flavorful cuisine. Chef Moody’s menus pop with creativity and innovation, highlighting fresh locally-sourced ingredients including seafood from Monterey Bay and other fare from Valley ranches.
The Disciples Escoffier is an invitation-only society of chefs, food and wine producers, sommeliers and culinary-industry professionals created to honor Auguste Escoffier, often referred to as the “Father of Modern Cuisine.” Escoffier was a pre-eminent chef of the early 20th century best known for codifying French cuisine and establishing important industry safety and sanitation standards still used today. The group works to establish contacts between professionals and students, to organize culinary events where members can gather to discuss French haute cuisine, and to unite all Disciples Escoffier from around the world.
The Club at Pasadera, a private country club in Monterey, Calif., opened as Pasadera Country Club in 2000 before being rebranded as The Nicklaus Club – Monterey in 2013. History of The Disciples Escoffier International
The Disciples Escoffier International was established in 1954, nearly 20 years after the great chef’s death. Founded by Jean Ducroux, then-President of the Fraternelle des Cuisiniers, the group was originally called the Disciples d’Auguste Escoffier. Ducroux intended for it to bring the chefs of southern France’s major hotels together in comradeship. The first real chapter of the group was established in the early 1960s, when it inducted the original 80 members. In the next few decades, chapters were founded throughout France and internationally.
