(COPPEROPOLIS, Calif.) – Saddle Creek Resort – the gated, 900-acre Castle & Cooke community located in the scenic foothills of the Copper Valley – has named Elizabeth Kallio chef of its award-winning Copper Grille.
Kallio is a graduate of the International School of Bangkok (Thailand), Michigan State University and the Culinary Institute of Oakland Community College in Farmington Hills, Michigan. She recently served as the personal chef to Michigan Governor Jennifer Granholm and her family at their private residence on Mackinac Island.
In 2007, Kallio was awarded both Gold and Silver Medals at the regional and national American Culinary Federation (ACF) Conventions. She will oversee a restructuring of the Copper Grille’s culinary program, highlights include:
* Rotating menus that change daily and repeat every three days to present resort guests and members with exciting new dining options at each sitting
* Revamped seasonal menus including more fresh, flown-in-daily seafood, locally grown fruits, vegetables and free-range meats
* “Guest Chef Nights,” featuring the culinary creations and wine-pairing recommendations of chefs from acclaimed restaurants in San Francisco, Napa, Sonoma and more
* In concert with Guest Chef Night, cooking classes in an intimate setting focusing on the art of pairing food and wine
“Elizabeth brings a wealth of energy and creativity to the Copper Grille and her ideas and passion will add incredible value to Saddle Creek’s culinary and wine programs,” says Saddle Creek general manager Bill Troyanoski.
“Saddle Creek and The Copper Grille have carved out an exciting niche in California’s resort restaurant category,” adds Kallio. “I look forward building on this success and implementing new menus and programs that take the culinary experience to the next level.”
The Copper Grille is located in The Lodge at Saddle Creek and overlooks the ninth-hole green complex and adjacent lake. The cozy-but-spacious dinning area blends seamlessly with its inviting bar and grill, which features a fully-stocked bar, full menu and flat screen televisions. Two patios on either side of the Copper Grille offer guests and members an alfresco dining experience with outstanding views of the golf course. In the fall of 2007, Saddle Creek unveiled a new, expanded wine cellar with more than 1500 bottles from hundreds of vineyards world-wide.
